Spicy, Minty Lentils & Broccoli

SPICY, MINTY LENTILS & BROCCOLI

I love this recipe so much because it’s easy (~10 mins to prep), healthy (complete proteins & green stuff!), and has lots of different layers of flavor (literally). It’s great to make ahead for a tasty weekday office lunch - just leave off the sauces & mint until right before you eat it. Enjoy!

Ingredients:

1 head of broccoli, chopped
1 serving prepared rice, quinoa, or mixed grains
1/4 package Trader Joe’s cooked lentils
2 Tbsp avocado oil
1 Tsbp olive oil
Splash lemon juice
Sprinkling of garlic powder, onion powder, black pepper & smoked paprika
2 Tbsp Trader Joe’s zhoug sauce
2 Tbsp hummus (preferably roasted garlic)
Approximately 12 mint leaves, thinly sliced

Directions:

1. Heat cast iron pan on high heat. Add avocado oil when hot.

2. Add broccoli and cover, allowing to cook on high for several minutes. Sprinkle with lemon juice and spices. Continue cooking for several minutes until broccoli is tender and charred, stirring occasionally. Add olive oil at the end of cooking and set broccoli aside.

3. Heat lentils in the pan, adding a bit of olive oil if necessary.

4. Layer the cooked grains and lentils into a bowl. Cover with broccoli. Add a layer of hummus and zhoug. Sprinkle with mint.

5. Enjoy! 😋

Vegetarian Soondubu (Korean tofu stew)

 Vegetarian Soondubu (Korean tofu stew)*

Super spicy as-is, but feel free to add chili peppers if you like to make your eyelids sweat like I do! The Korean ingredients are easy to get and inexpensive on Amazon, or visit your favorite local Asian market.

Ingredients:

  • 1 Tbsp. cooking oil
  • 1 Tbsp. gochugaru (Korean ground red pepper )
  • 1/4 cup kimchi [I like Wild Brine Korean Style which I get at Lazy Acres]
  • 5 garlic cloves, roughly chopped
  • 2 cups low-sodium vegetable stock [I like Edwards & Sons]
  • 2 tsp. gochujang (Korean hot pepper paste), or 3 Tbsp. sriracha sauce
  • 2 tsp. dwenjang (Korean bean paste)
  • 8 oz. silken tofu
  • 3.5 oz. beech mushrooms, enoki mushrooms, or similar
  • 1/2 zucchini, thinly sliced
  • 2 leaves bok choy, chopped into bite-size pieces
  • 1/4 cup water
  • 1 Tbsp. minced garlic
  • 2 green onions, chopped
  • 1 egg (optional)
Directions:

  1. Heat a cast iron dutch oven or similar heavy pot over high. Lower to medium and add oil.
  2. Add gochugaru and stir until oil turns red.
  3. Add kimchi and chopped garlic. Stir well to coat with oil and cook for 1-2 minutes.
  4. Add stock. Stir in gochujang/sriracha and dwenjang. Bring to a boil and cook 1-2 minutes.
  5. Add tofu in one big chunk. Gently break into large chunks with a wooden spoon. Boil for 8 minutes, gently stirring occasionally.
  6. Add zucchini and water.  Stir.
  7. Add bok choy, minced garlic, and mushrooms. Stir well.
  8. Stir in egg.
  9. Turn off heat. Stir in green onion. Cover and let sit few minutes.
  10. Serve over brown rice.

Almost Vegan Black-Eyed Peas & Greens

Almost Vegan Black-Eyed Peas & Greens

Ingredients:

  • 2 cups dried black-eyed peas
  • 2 Tbsp. olive oil
  • 1 yellow onion, diced
  • 1-2 yellow or red bell peppers, seeded and diced
  • 3 ribs of celery, diced
  • 2 tsp. ancho chili powder (or other spicy/smoky chili powder)
  • 3-4 cloves of garlic, finely minced
  • 1 tsp. dried thyme
  • 1 tsp. smoked paprika
  • 1/2 tsp. dried oregano
  • 1/2 tsp. black pepper
  • 1 tsp. dried parsley
  • 1/4 tsp. salt
  • 3 cups broth of your choice (I used Edward & Sons "Not-Beef" bouillon cubes)
  • Splash of liquid smoke
  • Splash of red wine
  • Squeeze of lemon
  • Splash of Worcestershire sauce (if you use Lea & Perrins, this is what makes it non-vegan)
  • Whole bunch of Lacinato kale, torn off stem and into bite-size pieces
Directions:

  1. Soak black-eyed peas according to preferred method - either over night in cold water, or "quick soak" method (bring to a boil, boil for two minutes, soak in cold water for an hour).
  2. Heat oil over medium-high heat in a large pot. Add onion and cook about 10 minutes until browned. Add peppers and celery and cook 3-6 minutes, until all veggies are soft. Add garlic and ancho chili powder and stir. Add thyme, oregano, paprika, pepper, parsley, and salt and stir briefly. Add black-eyed peas and broth, bring to a boil, lower to simmer.
  3. Simmer uncovered, stirring occasionally, until peas are tender, about 45-60 minutes. During cooking, add wine, lemon, and Worcestershire sauce and stir well. If need be, add a bit more broth along the way. Add kale approximately 10 minutes before end of cooking and stir well.
  4. When ready, serve immediately over brown rice. Top with Frank's Red Hot sauce. Enjoy!

Funky Avocado Toast

FUNKY AVOCADO TOAST

Why be basic when you can be funky?

Ingredients:

1/2 avocado
1/3-1/2 can garbanzo beans, rinsed and drained
2 garlic cloves
1/2 lime
1/4 red onion
1 Tbsp. minced ginger
Olive oil
Turmeric
Salt
Pepper
Red chili pepper flakes (or small chili pepper of your choosing)
2 sliced radishes, sliced cherry tomatoes, or other toppings
Your favorite bread

Directions:

1.  Toast slices of bread.
2.  Meanwhile, heat 1/2 of olive oil in saute pan over medium-high heat.  Add garbanzo beans.  Stir, sprinkle with turmeric, salt, red chili pepper flakes, and black pepper to taste (approximately 1/2 teaspoon each).  Saute until just starting to brown.  Let cool for a few minutes.
3.  Use a stick (immersion) blender or food processor to blend garbanzo bean mix with garlic, avocado, lime, onion, ginger, (and chili pepper if not using flakes) and enough olive oil to reach desired consistency.
4.  Spread on toast and top with radishes or other toppings.

Notes:

*Garlic and ginger and avocado and olive oil and garbanzo beans and turmeric are so, so good for you - but I know you know that.
*There are so many tasty ways to experiment with this - use Meyer lemon instead of lime, add smoked paprika, add 1 tablespoon tahini, etc.

THE 300 CALORIE PASTA LUNCH

THE 300 CALORIE PASTA LUNCH
(OK, may be closer to 310 calories)

Well, they said it would happen, and it finally did...my metabolism seems to have slooooowed down.  Gone are the days of piling noodles high on a plate with all manner of sauces and cheese and whatnot.  Gotta start cutting the calories, but I'm definitely not cutting the flavor.  So, without further ado, my first calorie-conscious recipe..

Ingredients:
(Serves 2)

1 1/2 cups dry Trader Joe's Brown Rice Fusilli
Splash of olive oil
1/8 cup Trader Joe's Basil Pesto Sauce
2 Tbsp. grated Parmesan cheese
2 dried red chili peppers, chopped or torn into small bits
2 fresh basil leaves, cut or torn into small bits
2 medium tomatoes (I like Campari from Costco), chopped
Shake of black pepper
Shake of garlic powder

Directions:

1.  Bring pot of water to a boil, adding a splash of olive oil.
2.  Add pasta, stir, cook for 7 minutes stirring frequently to unstick pieces.
3.  Drain pasta and rinse with cold water.
4.  Place pesto in pot and stir in pasta.
5.  Split evenly between two plates and sprinkle each with 1 Tbsp. cheese, pepper, garlic powder, 1 tomato, 1 chili pepper, and 1 basil leaf.

Notes:

*Pair with a low-ish calorie protein for a complete dinner meal.

*To be honest, this alone is not likely to fill you up (unless you have a remarkably small tank!).  But it gives you the chance to have some of what you really want (pasta!  pesto!  cheese!) and then supplement with a piece of fruit or vegetable (spinach is an easy, healthy and low-cal choice) and still stay under a respectable 400 calories.

*Kids can rinse the pasta, stir the pesto, or tear the basil.

FUEGO VERDE SALSA

When I make salsa, I try to make only as much as we can eat in a day or two, so I almost always make it in the small food processor attachment that came with my hand blender.  So if you want more than a small batch (enough for two people to dip chips in or pour on tacos for a day or two), then just multiply all the ingredients in proportion to one another and make it in a larger food processor or blender.

Ingredients:
(Makes small batch, about 3/4 cup)

3 jalapenos (less for the tender-tongued)
2 green onions, torn in half
6 or so stalks of cilantro, leaves only
Juice of 1/4 lime
1 tomatillo, cut in half
1 Tbsp. canola oil
1/2 tsp. salt
1/2 tsp. dried thyme
1 tsp. crushed garlic
1 tsp. - 1 Tbsp. Trader Joe's Green Plant Juice (if you're not familiar, it looks like ground up beetles and is made with kale and broccoli but tastes like mango and bananas)

Directions:

1.  Blend all ingredients in a hand blender food processor attachment until well-blended, approximately 1 minute.  Add more Green Plant juice to taste.

HEALTHY NO-COOK DINNER

Well, OK, it IS cooked, but the microwave doesn't really count, right?  The main point is that there are no pots and pans to scrub, or stove to wipe down!  :)

Ingredients:
(Makes 2 servings)

1 package Trader Joe's frozen organic brown rice
1/2 package Trader Joe's pre-cooked lentils
Handful organic spinach leaves
2 green onions
Sprinkling of Trader Joe's lite Mexican shredded cheese
1/2 lime
1/4 jalapeno, diced
4 Tbsp. Trader Joe's Chipotle Sauce (or equal parts ketchup + Worcestershire sauce + Tabasco Chipotle Sauce + mayonnaise)
1/2 avocado, sliced
Few sprigs of cilantro

Directions:

1.  Snip corner of rice bag and nuke for 3 minutes.

2.  Divide rice between two bowls.

3.  Top each bowl of rice with half of lentils and half of spinach.  Cut one green onion over each bowl with scissors.  Sprinkle each with cheese and jalapeno.  Squeeze lime juice over each.  Drizzle half of chipotle sauce over each.

4.  Nuke each bowl for approximately 1 minute.  Top each with avocado slices and cilantro.

Notes:

*Find the lentils on the vegetable wall at TJ's.

*Note that if you use Lea & Perrins Worcestershire Sauce, it contains anchovies and therefore is not vegetarian, but other brands are swimmer-free.

*If you prepare this all the way to the last step but don't cook, you can easily take it with you to work or school and nuke in the kitchen there...easy, fast, cheap, delicious & healthy!

*I use scissors to cut the jalapeno, too, and I slice the avocado in its skin in my hand with a dull-ish knife, so there is literally nothing to clean after cooking this except the scissors, the knife, and the bowls and forks.  Heaven!

*Leave out jalapeno and use sweet barbecue sauce for kiddos.

2 EASY & YUMMY FOOD TIPS!

Here are two super-easy, super-yummy food "tricks" of sorts that I can't believe it took me nearly 37 years to figure out:

1.  To inexpensively, quickly and easily "make" fruit-flavored yogurt, just keep a big tub of plain yogurt (I like Trader Joe's Cream Line or Greek) on hand, then mix a tablespoon-full of whatever jam or preserves you have on hand for sandwich-making into about a 1/2 cup of yogurt...each kid can have a different flavor, and you get to control how much sugar they have!

2.  As a super-fast chip dip, slice a ripe avocado in half, remove the pit, pour hot sauce (I like Valentina for its authentic flavor and consistency, but Cholula or Tapatio would work, too) into the divet, and scoop some out with each chip (use hearty chips or they will break).  Instant guacamole!

Enjoy!  :)

SQUASHADILLA

This surprisingly hearty recipe may require a leap of faith on the combination of ingredients for you (like it did for me), but please trust me!  The end result is worth it.

Ingredients:
(Makes 1 lunch entree sized portion)

1/4 butternut squash
1/2 jalapeño, sliced lengthwise and diced
Sprinkle black pepper
Sprinkle chili powder
1 tsp. minced garlic
Sprinkle dried oregano
1/4 white onion, sliced
1 Tbsp. canola oil
Salt
Juice of 1/2 Meyer lemon
1 egg
Milk for scrambling egg
1/2 avocado, sliced
Handful Trader Joe's shredded Mexican cheese blend
1 Trader Joe's Whole Wheat Olive Oil tortilla

Directions:

1.  Cook butternut squash according to the instructions that will no doubt be included on a sticker on the thing.  (Usually slice lengthwise and bake cut-side down in a baking dish with 1/4 inch of water at 350 for 45 minutes.)  Scoop out the flesh and set aside the extra for future recipes.

2.  Scamble the egg with milk in a large-ish pan.  Set aside.

3.  Using the same pan (because seriously, who needs more dishes to do??), heat oil over medium heat.  Add sliced onion, sprinkle with salt, pepper, and lemon juice to taste.  Cook, stirring frequently, until onions start to brown/blacken.  Set aside.

4.  In a small food processor (y'all know how I love me some Cuisinart handheld blender with food processor attachment), combine squash, jalapeno, black pepper, chili powder, garlic and oregano.  Blend until well mixed but not yet smooth.  Mix in the egg and the onions.

5.  Over medium heat, warm the tortilla in the pan.  Sprinkle one half of the tortilla with half the cheese.  With a spatula, scoop onto the cheese the squash mixture.  Sprinkle with the other half of the cheese and lay in the avocado slices.  Fold over the tortilla and press down with a spatula to squish the ingredients together and get the cheese to melt well.  After a minute or two, flip it and press down on the other side.

6.  Slice and serve with Valentina or Tapatio.

Notes:

*This amount of jalapeno will make it pretty darned spicy.  For less spice, remove the seeds from the jalapeno or use just the tip.

*Leave out the jalapeno and onion to make it kid-friendly.

SWEET HEAT

SWEET HEAT

This is one heckuva spicy salsa!  I love small-batch, extra-potent salsas...you can easily reduce the amount of jalapeno, or increase the amount of other ingredients, to stretch it further or to reduce the incendiariness (yep, just made that up!).

Ingredients:

1/2 (length-wise) jalapeno, cut in a few chunks
Good size chunk (maybe 1/6-1/4) white onion, cut in chunks
1 clove garlic
Handful (maybe 1/8 cup) canned corn kernels, drained
Juice of 1/4 lime
Sprinkle of dried thyme, crumbled by hand
Splash of orange juice
Sprinkle of salt
Sprinkle of black pepper
Handful cilantro leaves, torn by hand

Directions:

1.  Place all ingredients in a small food processor (I like the kind that attaches to a hand blender).
2.  Blend for a while.  Stop and scoop all ingredients from the sides of the container back into the blade so consistency is uniform.  Continue blending a while longer (total of maybe 1 minute).

Notes:

*The corn gives a nice, smooth consistency and adds to the sweetness a bit.

*Definitely go easy on the OJ - too much will overwhelm the other flavors.

RESISTANCE-IS-FUTILE SALSA

RESISTANCE-IS-FUTILE SALSA
(A modified version of my Caliente Salsa proportioned for use with a hand blender.)

Just got my first immersion (hand) blender at Costco and already I love it!  Whipped up this salsa in less than 5 minutes and couldn't stop eating it until the bowl was empty.

Ingredients:

4 medium tomatoes, chopped
1 jalapeno, chopped
1/6 large red onion, diced
1 baby carrots, sliced
1 radish, diced
1 Tbsp. minced or crushed garlic
1 Tbsp. canola oil
1 dash salt
1 dash black pepper
Small pinch dried thyme

Directions:

1.  Add all ingredients to small mixing bowl (preferably one made for your hand blender).

2.  Mix on high speed until desired consistency (15-30 seconds).  Try not to eat it out of the mixing bowl with your fingers.

Notes:

*Adding a bit of chopped cilantro leaves would make it even more irresistable...I just didn't have any on hand because, despite my best efforts, my attempts to grow cilantro have heretofore been unsuccessful...

CLOUDY DAY RAINBOW SOUP

CLOUDY DAY RAINBOW SOUP

If you're anything like me, you need something warm and filling on a cold day. You won't be able to stop eating this!

Ingredients:

(Makes 4-6 bowls)

Vegetable oil (not olive oil)
1 yellow onion, thickly sliced
1 package Trader Joe's sweet potato spears
1/2 red bell pepper, chopped
1/2 bunch cilantro leaves, torn or roughly chopped + extra sprigs for garnish
2-4 tsp. coriander powder
Black pepper, to taste
Juice of 1 lime
Several tablespoons crushed garlic
1-3 tsp. ginger powder
1 quart broth (chicken or veggie)
Several cups water
Handful spinach
1 lb. dried black eyed peas
6-8 tomatoes, roughly chopped
[Optional: 1/2 jalapeno, finely diced]

Directions:

1. Soak and rinse black eyed peas according to package prior to starting cooking process.

2. Heat oil in a large soup pot over low-medium heat. Add bell pepper, [jalapeno] and onion. Continue stirring for a few minutes.

3. Meanwhile, snip corner of sweet potato package and microwave on high power for 5 minutes. Carefully remove from package and chop.

4. Add sweet potatoes to pot and stir. Add half lime juice, 1 teaspoon coriander, 1 tablespoon garlic, 1 teaspoon ginger, and a good shake of black pepper and stir well but gently (to prevent the sweet potato from getting mushy).

5. Add cilantro leaves and black eyed peas. Add broth plus enough water to cover the mixture by several inches.

6. Stirring well, turn heat to high and bring soup to a boil. Turn heat to low, cover and simmer, stirring occasionally.

7. After 10 or so minutes of simmering, add tomatoes, other half of lime juice. Add more ginger, coriander, garlic and pepper to taste, stir well, and recover.

8. After another 10 or so minutes of simmering, add spinach and stir well.

9. Simmer another 15-20 minutes, or until black eyed peas are tender.

Notes:

*For picky kiddos, beans and sweet potatoes may be easily mashed up in their bowl with a fork.

*Hearty enough to satisfy even a devoted carnivore. Make it more complete with a green salad and garlic wheat toast.

*Try substituting kale for spinach (and then let me know how that works out!).

TEQUILA-MANGO BBQ DELIGHT

TEQUILA-MANGO BBQ DELIGHT

Ingredients:
(Makes enough for 4 entree portions, i.e., enough to cover 4 chicken breasts or fish filets)

1 mango
1 clementine or tangerine
1 cube Trader Joe's frozen cilantro (or 1/2 bunch fresh cilantro, minced)
6 Tbsp. Cholula hot sauce (or to taste)
1 Tbsp. crushed garlic
1 cup veggie or chicken broth
1 tsp. olive oil + 1 Tbsp. olive oil
1/2 tsp. apple cider vinegar
1 tomato, chopped
Black pepper, to taste
Salt, to taste
Tequila, poured to a count of 4
Splash of cooking sherry
Garlic powder, to taste
1/2 - 3/4 avocado, diced
1 yellow (crookneck) squash, thinly sliced and sprinkled with garlic powder
3/4 - 1 white onion, sliced
[Optional: 1 tsp. corn starch]

Directions:

1. To remove flesh of mango, slice with a sharp knife from one end to the other, repeat about an inch away and remove "wedge," slicing it from the center stone if necessary. Gently slice the skin off the wedge. Put mango in a blender.

2. Add Cholula, clementine, cilantro, tomato, 1 tsp. olive oil, apple cider vinegar, broth, crushed garlic, tequila, and black pepper to blender. Blend on high or "liquefy" until thoroughly mixed. Remove any chunks. Stir in garlic powder and salt to taste. Should yield approximately 2 cups of sauce.

3. In a deep sauce pan or wok, heat 1 Tbsp. olive oil and sherry over low-medium heat. Add squash and cook for 2-4 minutes, stirring occasionally. Pour in 1 1/3 cups of sauce and mix well. Continue to cook until sauce begins to thicken, stirring as necessary to prevent sticking or browning. [Stir in corn starch, mixed in water, if thicker sauce is desired.]

4. 3 minutes prior to serving, stir onion into sauce and mix well.

5. Barbecue chicken breasts or fish filets, basting each side with remaining 2/3 cup mango sauce 3 minutes prior to removing from flame.

6. Ladle sauce over chicken breasts or fish filets atop brown rice. Top each piece with avocado bits.

Notes:

*Consider making half the sauce without Cholula and tequila for kids' portions.

*I think halibut would be a good fish choice.

*Careful with this one...you might spoil your spouse who will then no longer be satisfied with leftover macaroni and cheese or cereal for dinner (unless he's my husband, and then cereal for dinner is always a welcome and viable option).

FAST 'N FRESH ANGEL HAIR DIABLO

The best part of this dish (my favorite thing to throw together for lunch) is that you can probably make it with what you've already got in your fridge and cabinets. The second best part is that it's delish! And the third best part is that each serving costs about $0.50...hard to beat!

Ingredients:
(Makes 2 adult-sized entree servings)

2 servings angel hair pasta
2 tomatoes, chopped
Handful of spinach, torn or sliced
2 green onions, sliced or cut with scissors
1/2 jalapeno, finely diced
2 eggs
Dash of thyme
Dash of basil
Black pepper, approximately 1/2 tsp.
Olive oil
Salt
Parmesan cheese, to taste (at least several Tbsp.)
Squeeze of fresh lemon juice
Red pepper flakes
[Optional: Few Tbsp. pasta sauce]

Directions:

1. Cook pasta according to package in salted water.

2. In the meantime, stir eggs over low heat in small omelette pan until well cooked.

3. Add cooked eggs to the bottom of a large bowl. Add red pepper, jalapeno, green onions, Parmesan cheese, black pepper, thyme, and basil.

4. Drain pasta when cooked and add to bowl. Drizzle with olive oil and lemon juice.

5. Top with tomatoes and spinach.

6. Stir very well and serve topped with extra cheese [and pasta sauce].

Notes:

*Kid-friendly if you leave out the jalapeno, green onion (if your kid is picky like mine) and red pepper.

*To make it even faster, use hot tap water to start with (cuts down on boiling time).

*To make it wheat-free, use Trader Joe's Brown Rice Spaghetti.
