Best Dip Ever (aka “Fake Baba Ghanoush”)


 Ingredients:


1 eggplant, sliced across 1/2” thick

1/2 can white beans or chickpeas, drained

1/4 cup EVOO + more

1 Tbsp lemon juice

1 garlic clove

Lots of salt

1/2 tsp Ajika seasoning or smoked paprika

1/4 cup Italian parsley leaves, chopped

Bread or crackers for serving


Directions:

1. Preheat oven to 450°. 

2. Cover each eggplant slice with salt and set in a colander to drain for 10 minutes. Rinse off well, pat dry, and smear EVOO on each slice. Place each slice on a cookie sheet or rimmed baking sheet. You should be able to fit all the slices on one sheet.

3. Bake eggplant for 15 minutes. Flip each slice over and bake another 10-15 minutes, until starting to char. Set aside for a bit to cool.

4. Add eggplant and all other ingredients to a food processor. Do not add salt! There will be enough from the eggplant. Process until consistency is very smooth.

5. Try not to eat it all right off the spoon. Or do. Life is short! 😋

6. Serve with the best bread you can get your hands on. Enjoy!

Notes:

*If garlic taste is too pungent, reduce to 1/2 clove or roast garlic first.

*Kids can help chop or process, and they might even like it even though eggplant is clearly the grossest food on the planet! 😜

Instant Pot Vegetarian White Bean Chili

 Instant Pot Vegetarian White Bean Chili 

{Adapted from a My Fitness Pal recipe}


Ingredients:

1 1/2 cups dry white beans, soaked and drained

2 Tbsp olive oil

1 white or yellow onion, chopped

1 anaheim chili, chopped

4 large stalks of chard

3 cloves of garlic, chopped

1 Tbsp ground cumin

2 tsp ground coriander

2 tsp dried oregano

1/2 tsp smoked paprika

1 Tbsp nutritional yeast

3 cups butternut squash, cubed (or 2 bags TJ's butternut squash)

2 1/2 cups vegetable broth

1/2 cup frozen corn

Salt to taste

Pepper to taste

1/4 cup cilantro

Lime for garnish

Vegan sour cream for garnish

Garbanzo bean flour for thickening


Directions:

1. Soak beans overnight or use quick-soak method (https://www.thekitchn.com/how-to-quicksoak-dried-beans-cooking-lessons-from-the-kitchn-198610).

2. Remove leaves from chard stalks. Chop stalks and leaves separately.

3. Add oil to Instant Pot, select saute, and adjust to high heat.When oil is hot, add onion, chili pepper, and chard stalks, stirring occasionally for 5 minutes until tender.

4. Add garlic, cumin, coriander, oregano, and paprika. Stir and cook for 1 minute. Press cancel.

5. Add beans, butternut squash, broth, nutritional yeast, chard leaves, corn, salt, and pepper to the pot. Lock the lid, turn valve to "sealing," select the pressure cook option, and adjust it to high heat. Set timer for 20 minutes (will take approximately 15 minutes to start the 20 minute timer).

6. When 20 minutes has elapsed, let it sit as-is for 10 minutes. Release remaining pressure carefully!

7. Add garbanzo bean flour as necessary to thicken, stirring well. Stir in cilantro. 

8. Serve with sour cream and lime wedge.

Almost Vegan Black-Eyed Peas & Greens

 Almost Vegan Black-Eyed Peas & Greens


Ingredients:

  • 2 cups dried black-eyed peas
  • 2 Tbsp. olive oil
  • 1 yellow onion, diced
  • 1-2 yellow or red bell peppers, seeded and diced
  • 3 ribs of celery, diced
  • 2 tsp. ancho chili powder (or other spicy/smoky chili powder)
  • 3-4 cloves of garlic, finely minced
  • 1 tsp. dried thyme
  • 1 tsp. smoked paprika
  • 1/2 tsp. dried oregano
  • 1/2 tsp. black pepper
  • 1 tsp. dried parsley
  • 1/4 tsp. salt
  • 3 cups broth of your choice (I used Edward & Sons "Not-Beef" bouillon cubes)
  • Splash of liquid smoke
  • Splash of red wine
  • Squeeze of lemon
  • Splash of Worcestershire sauce (if you use Lea & Perrins, this is what makes it non-vegan)
  • Whole bunch of Lacinato kale, torn off stem and into bite-size pieces
Directions:

  1. Soak black-eyed peas according to preferred method - either over night in cold water, or "quick soak" method (bring to a boil, boil for two minutes, soak in cold water for an hour).
  2. Heat oil over medium-high heat in a large pot. Add onion and cook about 10 minutes until browned. Add peppers and celery and cook 3-6 minutes, until all veggies are soft. Add garlic and ancho chili powder and stir. Add thyme, oregano, paprika, pepper, parsley, and salt and stir briefly. Add black-eyed peas and broth, bring to a boil, lower to simmer.
  3. Simmer uncovered, stirring occasionally, until peas are tender, about 45-60 minutes. During cooking, add wine, lemon, and Worcestershire sauce and stir well. If need be, add a bit more broth along the way. Add kale approximately 10 minutes before end of cooking and stir well.
  4. When ready, serve immediately over brown rice. Top with Frank's Red Hot sauce. Enjoy!

Aleppo Fried Rice

Aleppo Fried Rice



Fast, easy, healthy, cheap + delicious lunch for one! ðŸ˜‹

Ingredients:


  • 1/2 bag Trader Joe's frozen brown rice
  • TJ's Tunisian olive oil
  • 1/4 package TJ's pre-cooked lentils
  • 1/8 white or yellow onion, sliced
  • Aleppo pepper, to taste
  • Fresh or dried mint, to taste
  • 1 tsp. garlic powder
  • Black pepper, sprinkle
  • Smoked paprika, sprinkle
  • Ground cumin, sprinkle
  • 1 tsp. lemon juice
  • Handful spinach leaves
  • Fresh mint for serving
Directions:


  1. Microwave rice according to package
  2. Meanwhile heat olive oil in a wok over high heat
  3. Add lentils + onion, stir for a couple of minutes
  4. Sprinkle generously with Aleppo pepper, stir
  5. Add mint, garlic powder, black pepper, smoked paprika, ground cumin + lemon juice, stir
  6. Add more olive oil + spinach 
  7. Add rice, stir well until spinach is wilted + rice is thoroughly mixed in
  8. Sprinkle with fresh mint + enjoy!

Funky Avocado Toast

FUNKY AVOCADO TOAST

Why be basic when you can be funky?


Ingredients:

1/2 avocado
1/3-1/2 can garbanzo beans, rinsed and drained
2 garlic cloves
1/2 lime
1/4 red onion
1 Tbsp. minced ginger
Olive oil
Turmeric
Salt
Pepper
Red chili pepper flakes (or small chili pepper of your choosing)
2 sliced radishes, sliced cherry tomatoes, or other toppings
Your favorite bread

Directions:

1.  Toast slices of bread.
2.  Meanwhile, heat 1/2 of olive oil in saute pan over medium-high heat.  Add garbanzo beans.  Stir, sprinkle with turmeric, salt, red chili pepper flakes, and black pepper to taste (approximately 1/2 teaspoon each).  Saute until just starting to brown.  Let cool for a few minutes.
3.  Use a stick (immersion) blender or food processor to blend garbanzo bean mix with garlic, avocado, lime, onion, ginger, (and chili pepper if not using flakes) and enough olive oil to reach desired consistency.
4.  Spread on toast and top with radishes or other toppings.

Notes:

*Garlic and ginger and avocado and olive oil and garbanzo beans and turmeric are so, so good for you - but I know you know that.
*There are so many tasty ways to experiment with this - use Meyer lemon instead of lime, add smoked paprika, add 1 tablespoon tahini, etc.

New Years "Good Luck" Goulash

New Years "Good Luck" Goulash
Serves 3-4

{sorry no pic - ate it all up before I could take one!}

Ingredients:

1 lb. dried black eyed peas
10 oz. collard greens, stems removed
2 Tbsp. olive oil
1-2 onions, chopped
1-2 large sweet potatoes, skinned and chopped
4 garlic cloves
1 bay leaf
1 tsp. smoked paprika
1/2 cup orange juice
1/2 cup veggie broth
1 tsp. apple cider vinegar
Salt, to taste
Pepper, to taste
Optional:  1 tsp. Tabasco Sauce
Optional:  brown rice for serving

Directions:

1.  Rinse and drain black eyed peas well.  Add to large cast iron pot/Dutch oven with 6 cups water, garlic cloves, and bay leaf.  Bring to a boil, reduce heat, and simmer partially covered about 45 minutes, or until tender but not mushy or falling apart.

2.  15 minutes before the black eyed peas are done, stir in the sweet potatoes. 

3.  Drain and rinse the black eyed peas and sweet potatoes in cold water and set aside.  Remove the bay leaf.

4.  Rinse and dry pot.  Heat olive oil over medium heat, add onion, saute about 5-6 minutes until soft but not mushy. 

5.  Layer collard greens on top of onion.  Add black eyed peas and sweet potatoes on top, but don't stir.  Pour orange juice, veggie broth, and vinegar (and Tabasco, if using) over mixture.  Sprinkle with paprika, and with salt and pepper to taste.

6.  Bring to a boil, reduce heat, cook for 5-10 minutes as-is, then stir gently.  Cook for another 10-15 minutes, until collard greens are cooked but not wilted and veggies are not mushy.

7.  Serve hot, over rice and with additional Tabasco, if desired. 

8.  Enjoy good luck (& good health!) the whole year through!  :)

SWEET POTATO-AVOCADO POCKETS

Inspired by Costco's chicken and carne asada bakes.  Great for kids, picnics, potlucks & sharing!



Ingredients:


4-6 small sweet potatoes, peeled and diced

3 Tbsp. olive oil
1 tsp. + 1 tsp. garlic powder
1/2 tsp. black pepper
1 tsp. paprika
1/2 tsp. salt
2 sheets puff pastry, thawed according to package
1/2 avocado, diced
5-6 small tomatoes, diced
1/2 cup shredded Mexican blend cheese or mozzarella cheese
1/2 cup cooked black beans
Juice of 1/2 lime
1 tsp. coriander powder
2 handfuls spinach leaves, finely chopped or torn
1/4 cilantro leaves, chopped
1 egg, lightly beaten with 1 Tbsp. water

Directions:


1.  Preheat oven to 375°.  In a gallon size zipper top plastic bag, thoroughly mix sweet potatoes, olive oil, 1 tsp. garlic powder, black pepper, paprika, and salt.


2.  Bake sweet potatoes on a sheet of aluminum foil on a cookie sheet for 15 minutes.  Stir around sweet potatoes with tongs and bake for an additional 15 minutes, or until lightly browned and soft.  Set cooked sweet potatoes aside to cool.


3.  In a large bowl, mix tomatoes, 1 tsp. garlic powder, avocado, cheese, lime juice, coriander, black beans, spinach, cilantro, cooled sweet potatoes, and salt and pepper to taste.


4.  Turn oven up to 400°.  Unfold puff pastry on lightly floured flat surface.  Slice lengthwise along score marks (into thirds).  Towards one end of each piece of puff pastry (leaving approximately 1/2" of space empty at the end and 1/4" on each side), scoop in a handful of the sweet potato mix.  Fold the puff pastry over and squish together the sides, gently folding them up a bit, and roll over the ends.


5.  Brush each pocket with egg mixture and place onto a lightly oiled piece of aluminum foil on a cookie sheet.  Bake for 18-20 minutes, or until browned.


6.  Douse liberally with Cholula and enjoy!


Notes:


*Kids can help by squishing the sweet potatoes in the bag, mixing the veggies, filling the pockets, or applying the egg mixture.

LIFE'S A BEACH PASTA SALAD

Perfect for an impromptu beach trip or summer potluck!


Ingredients:
(Makes 4 side dish portions or 2 entree portions)

1/2 package orzo pasta
4 carrots, diced
1 zucchini, diced
1 green onion, sliced
1 can artichoke hearts, drained & excess liquid squeezed out, chopped
1/2 can garbanzo beans, drained & rinsed
4-5 garlic cloves, minced
Juice of 1/2 lemon
Olive oil
Dried dill, 2 shakes
Dried oregano, 1 shake
Dried thyme, 1 shake, rubbed between fingers to release flavor
1/3 cup grated Parmesan cheese
Salt, to taste
Pepper, to taste

Directions:

1.  Cook orzo according to package.

2.  While orzo is cooking, nuke carrots and zucchini in a bowl covered with microwave-safe plastic wrap with a bit of water, stirring once during cooking, until tender but not overly soft (approximately 3 minutes total).  Drain and thoroughly rinse cooked veggies with cold water.

3.  When orzo is done, immediately drain and thoroughly rinse with cold water to stop cooking.  Place in large mixing bowl and stir in a bit of olive oil.  Add veggie mixture and green onion to mixing bowl and stir gently.

4.  Add all remaining ingredients to bowl, mixing gently but thoroughly.  Add salt and pepper to taste.

5.  Serve with crusty French bread.

Notes:

*Try to make a couple of hours ahead and chill in fridge - flavors blend marvelously!

*To pack for the beach, make far enough ahead that toasted bread and pasta salad have a chance to thoroughly cool down before putting in cooler.

*Would be good with small, previously-cooked/thawed shrimp added and/or a shake of red pepper flakes.

*Add whatever your child's favorite veggie is to increase likelihood of consumption!  Also, using bread as a "spoon" makes eating it more fun!

*Kids can help by stirring all ingredients.

TEXMEX-ISH CASSEROLE




Ingredients:
(Makes 2 casseroles/4 servings each)

1 head cauliflower, florets only, diced
6 tomatoes, diced
1/2 red, yellow or orange bell pepper, diced
1 can corn, drained
1 can artichoke hearts in water, drained and chopped
6-8 small potatoes
[Optional:  1 can red kidney beans, drained and/or 1 can cooked chicken, drained]
1/4 red onion, finely diced
2/3 bag Trader Joe's brown rice fusilli pasta
Juice of 1/4 lemon
1 cup + 1/4 cup + 1/4 cup shredded Mexican blend cheese
1 tsp. garlic powder
1 tsp. dried oregano
1/4 tsp. chili powder
1/4 tsp. ground cumin
1/4 tsp. salt
1/2 tsp. coriander
1/2 tsp. black pepper
Vegetable oil
[Optional:  1/2 bunch cilantro, leaves only, chopped]

Directions:

1.  Preheat oven to 400°.  


2.  Pierce potatoes with a knife.  Nuke on a plate for 2-3 minutes (until semi-soft), turning over once.  Set aside to cool.

3.  Meanwhile, bring a large pot of water with salt and oil to a boil.  When boiling, add pasta, cauliflower, bell pepper, and onion.  Cook until pasta is tender, approximately 8 minutes.  Drain and spray with cold water.

4.  Chop potatoes into chunks.

5.  In a large glass bowl, mix pasta combo, corn, artichoke hearts, tomatoes, potatoes, [beans/chicken], [cilantro], lemon juice, and all spices.  Mix well, adding 1 cup of cheese.

6.  Grease two square casserole dishes and spoon in the pasta mixture.  Bake for 15 minutes.

7.  Top each casserole with 1/4 cup cheese and bake 15 minutes more.

Notes:

*Gluten-free!

*Could also make with brown rice instead of pasta, but if your kids are anything like mine, they won't eat rice unless it's disguised as pasta.

*I made mine with the artichoke hearts sprinkled on top instead of mixed-in (to entice my artichoke-loving daughter to try it), which makes for a nice presentation.  If you do it that way, be careful that the artichokes don't burn during baking.

*Excellent served with avocado slices and spicy salsa on top.

*Kids can help by stirring all the ingredients and scooping it into the dishes.

GREENS & CHICKPEA STEW



Ingredients:
(Makes 2 entree size portions)

1 bunch collard greens, stems removed and leaves roughly chopped
1 yellow onion, thinly sliced
2 Tbsp. olive oil
3 Tbsp. crushed garlic
5 white mushrooms, crumbled
3 small red potatoes
1 can chickpeas (garbanzo beans), drained and rinsed
1 cup vegetable broth
1 Tbsp. brown sugar
2 tsp. apple cider vinegar
1/2 tsp. chili powder
1 tsp. dried parsley
2 Tbsp. mayonnaise
Red pepper, to taste
Black pepper, to taste
Salt, to taste
Garlic powder, to taste
2 servings brown rice, cooked

Directions:

1.  Prick potatoes with fork and nuke for approximately 3 minutes.  Chop and set aside.
2.  Heat oil over medium heat.  Add onion and stir until lightly browned, approximately 6 minutes.  Add garlic, stir, and cook another 4 minutes.
3.  Add greens, toss, just until wilted.
4.  Pour in enough broth to cover vegetables.  Add chickpeas, potatoes, mushrooms, brown sugar, vinegar, red pepper, salt, black pepper, garlic powder, chili powder and parsley.
5.  Bring to a boil, cover, reduce heat to low, and simmer approximately 45 minutes, stirring occasionally.
6.  Stir in mayonnaise until fully dissolved.
7.  Serve over brown rice.

Notes:

*Leave out red pepper when serving to munchkins.

*Stir in sliced, cooked sausage for the carnivores in your life.

SQUASH & KALE BONANZA

SQUASH & KALE BONANZA



If you're like me, you always feel a wee bit guilty when squash season hits your local store.  You eye them as you walk by, thinking to yourself, "One of these fine autumn days I'm going buy one of those bad boys and cook a healthy, hearty meal for my family."  Well, thanks to this recipe, that no longer need be a mere dream - pick up that acorn squash and get cookin'!

Ingredients:
(4-6 servings)

2+ 3 Tbsp. olive oil
2 Tbsp. light butter (anything that melts well)
4 smallish yellow potatoes + 2 smallish red and/or purple potatoes
1 acorn squash
1 red bell pepper, diced
1 leek, thinly sliced
1 cup chopped kale
1/2 pound, or 1 container, crimini or other brown mushrooms, diced
2/3 can garbanzo beans, rinsed and drained
Garlic powder, to taste
Salt, to taste
Pepper, to taste
1/4 + 1/4 tsp. ground sage

Directions:

1.  Slice squash in half lengthwise, scoop out seeds and stringy parts, and place cut side down in covered microwave safe dish with a half-inch of water.  Nuke for 8-9 minutes or until soft.  Once a bit cooled, carefully remove skin and dice cooked squash.

2.  While squash is cooking, place 2 Tbsp. olive oil in a large skillet over medium heat.  Once hot, add garbanzo beans.  Cook for several minutes, stirring frequently, until a bit soft and browned.

3.  Poke potatoes with a fork on each side, and nuke for 3 minutes per side.  Once a bit cooled, dice.

4.  Place additional oil and butter in the skillet until butter is melted.  Mix in squash, potatoes, mushrooms, bell pepper, and leek.  Season with garlic powder, salt and pepper.  Cook approximately 25 minutes, stirring occasionally, until well-mixed and just starting to brown.

5.  Mix kale and additional sage into the skillet.  Continue cooking 5 minutes or until kale is wilted. 

6.  Serve over Trader Joe's Harvest Grain Blend, brown rice or cous cous, with crusty bread.

Notes:

*It may sound a bit plain, but the mixture of the butter with the creaminess of the potatoes and the earthiness of the sage and the nuttiness of the squash is superb!

*My kiddos said their favorite part were the"squishy bits" (the squash and potato), and they both even ate at least two bites of kale, which I deem a success...but then, I have low standards.  :)

SQUARE MEAL MAC 'N CHEESE

SQUARE MEAL MAC 'N CHEESE




This one is a shout-out to those of you with picky eaters...even my ultra-finicky daughter gets all the food groups in when I make this.

Ingredients:
(Makes approximately 2 kid-size portions)

1 packet Trader Joe's (or other single serving) Microwavable Mac 'n Cheese
10 baby carrots, sliced
Handful garbanzo beans, drained
Handful spinach leaves, torn or chopped into miniscule bits
Olive oil
Parmesan cheese
Water

Directions:

1. Heat olive oil in a small sautee pan over medium heat. Add garbanzo beans and cook for approximately 4 minutes, stirring occasionally.

2. Meanwhile, place carrots in a microwave safe bowl and add a few tablespoons of water. Cover with plastic wrap and microwave on high for one minute; stir; cook another minute; stir; cook one more minute.

3. Drain water from carrots and add to beans in pan.

4. Mash beans and carrots in pan with a fork until well mixed.

5. Follow directions for making mac 'n cheese.

6. Add spinach and a tablespoon or so of parmesan cheese to pan and mix well. Cook one or two more minutes.

7. Combine veggie mix with cooked mac 'n cheese. Sprinkle with more parmesan cheese.

Notes:

*Kids can help by stirring the cheese into the cooked macaroni (my daughter loves that).

*If necessary, feel free to recreate "Close Encounters of the Third Kind" with your parmesan pile...atleast they're getting dairy, grains, legumes and two colors (!) of veggies.

*This is a good one if you're trying to feed kids from different age groups...just leave out the extra parmesan for little ones when you're concerned about the sodium.

*My daughter will eat this despite a passionately-professed dislike of beans...I'm not sure she actually knows there are beans in it and I am not about to tell her. If you know her, please don't tell her either, okay?

KITCHEN SINK, MEXICAN STYLE

So, the hubby is trying to eat a low-sodium/low-carb/no oil diet, which makes cooking with flavor sometimes, uh, challenging. But I'm adapting...here's something I threw together last night that turned out really well...but I didn't expect it to be particularly good, so I didn't get a picture of it. Next time!

Ingredients:
(Makes 2-3 entree portions)

1/2 Meyer lemon
10-15 baby carrots
Crushed garlic (approximately 1 Tbsp.)
1/2 can garbanzo beans, drained and rinsed
1 yellow squash, chopped
2 zucchinis, chopped
1 small white onion, thickly sliced
1/2 yellow bell pepper, chopped
1 bunch cilantro, roughly chopped (top 2/3 only)
1 bay leaf
Dried oregano (approximately 1/2 tsp.)
Garlic powder (approximately 1 tsp.)
Cumin powder (approximately 2 tsp.)
Black pepper (approximately 1/2 tsp.)
Dash of paprika

Directions:

1. Squeeze most of the lemon juice into a non-stick pan over medium-high heat. Add a few spoonfuls of water.

2. Once it's steamy, add carrots. Cook for 1 minute and add crushed garlic and whole lemon half. Stir well and cook for a few more minutes.

3. Add all other ingredients except cilantro. Stir well, cover and cook for approximately 7 minutes.

4. Remove cover, add cilantro, and cook 5 more minutes or until veggies and beans are tender.

5. Remove lemon and bay leaf. Serve with brown rice cous cous (made by Lundberg and available at health food stores).

Notes:

*For truly "no salt" diets, look for no sodium canned garbanzo beans (Fresh & Easy sells them).

*For more flavor & less healthfulness, top with a generous sprinkling of Trader Joe's Mexican Shredded Cheese and/or your favorite salsa.

*Kids (at least my picky eater) seem to like the brown rice cous cous better than brown rice or cous cous. Go figure.

*Kids can help by cutting zucchini or squash with a butter knife if you're not concerned about uniformity of chunk size, or can sprinkle on the optional cheese (always a crowd pleaser).

*Have I mentioned that Meyer lemons are what all other lemons aspire to be? I wouldn't try making this with a regular lemon - probably too sour and not enough depth of flavor.

CURRY DELIGHT

CURRY DELIGHT
(Makes 2 side dish portions)

Ingredients:

2 red potatoes
1 can garbanzo beans, rinsed and drained
1 small red onion, sliced
2 handfuls fresh spinach
Olive oil
Garlic powder
Curry powder
Black pepper
Chicken or veggie broth

Directions:

1. Microwave potatoes for 6 minutes (poke holes with fork prior to cooking).
2. In wok over medium-high heat, cook garbanzo beans in olive oil until lightly brown and soft.
3. Sprinkle beans with garlic powder, curry powder and pepper.
4. Dice potatoes; add potatoes and onion to beans. Stir and cook 2 minutes.
5. Add spinach to pan. Stir and cook 1 minute.
6. Add splash of broth and cook 2 minutes, or until broth is absorbed.

Notes:

*Serve with brown rice for a complete protein.
*Kids can help by cutting potatoes once they are cool (using a butter knife).
*I like to serve this as a side dish along with some garlic naan (frozen from Trader Joe's) and one of the fast and easy "Taste of India" sauces (also from Trader Joe's) mixed with rice.

TOO-GOOD-TO-BE-TRUE ENCHILADAS

TOO-GOOD-TO-BE-TRUE ENCHILADAS

Ingredients:
(Makes 4 enchiladas with some stuffing leftover)

3 tbsp. olive oil
2 tsp. Trader Joe's Minced Garlic
1/2 red onion, julienned
1/2 red pepper, julienned
1/2 jalapeno, minced
1 bag Trader Joe's fresh broccoli/cauliflower
1 can (15 oz.) black beans, drained and rinsed
3 cups Trader Joe's shredded Mexican blend cheese
1/2 bunch of cilantro, cut or chopped
[Optional: 1/2 bag Trader Joe’s frozen organic brown rice]
4 Trader Joe's olive oil wheat tortillas
1/2 jar Trader Joe's salsa verde
4 tbsp. Trader Joe's 2% Greek Style plain yogurt
Black pepper
Lime juice
Garlic powder
Cumin
[Optional: cherry tomatoes, radishes]

Directions:

1. Preheat oven to 350 degrees.
2. Snip corner of broccoli/cauliflower bag; microwave on high for 3 minutes and set aside. [If using rice, snip corner of rice bag and microwave for 3 minutes.]
3. Heat oil over medium heat; saute minced garlic, jalapeno, onion and red pepper until onion is transluscent, about 4 minutes.
4. Transfer onion mixture to a big bowl; mix in veggies, beans, 2 cups cheese, and cilantro [and rice]. Add black pepper and cumin to taste. Break up broccoli/cauliflower with spoon.
5. Heat tortillas one at a time in the pan until warm but still pliable.
6. Lightly coat a baking dish with nonstick spray.
7. Place 1/3 cup of veggie mixture on one edge of each tortilla, roll, and place in dish.
8. Cover enchiladas with salsa and sprinkle with leftover cheese.
9. Bake for 15-17 minutes.10. Mix yogurt, lime juice, cumin, pepper and garlic powder [and chopped tomatoes, radishes, extra cilantro, and/or extra jalapenos] in a small bowl. Sprinkle or spread over baked enchiladas and serve with extra cilantro leaves as garnish.

Notes:

*Good as a "new baby" gift - just prepare up through step 8 in disposable cooking tray and deliver immediately with garnish and yogurt sauce in separate container. And leave out the jalapenos for nursing mamas!
*Can easily add canned chicken or cooked small shrimp to veggie mixture.
*Makes an impressive dish but is really easy and quick!
*Freeze any leftover veggie/cheese mixture and thaw before proceeding with step 5.
*Kids can help by stirring the veggie mixture.
